KARUPATTI JANGIRI (Palm Sugar Jangiri)

INGREDIENTS 
1 Cup of Idly Rice
¼ Cup of Urad dal
1 Cup of ADISIL Palm or coconut sugar 
2 cardamom, crushed
Pinch of dry ginger powder
Pinch of Salt

How to Make                                                                                                                                                                                                                                      1. Soak both the idly rice and urad dal overnight. The next morning, wash both the dal and rice, then grind them in a grinder for 30 minutes, adding very little water until the batter reaches a consistency similar to that of dosa batter.
2. Heat ADISIL Palm or coconut sugar with water, mix it well for 6 mins till it turns into syrup. Now add cardamom, salt and dry ginger powder, mix well.
3. Take a ziplock bag, put a hole in the center, and pour the batter into the bag.
4. Heat a shallow pan with oil to deep fry, pipe the batter into the hot oil, and cook on medium heat until it's done. It has to be pale in colour.
5. Now place the Jangiri in warm ADISIL Palm or Coconut sugar syrup for 2 mins until the second batch is done. Repeat the same process for the rest of the batter.
Yum yum karupatti Jangiri is ready to enjoy. It tastes great when it is warm.
